Here is a yummy raw chocolate fudge brownie recipe that I have for a late night snack while I'm watching a movie on the couch. It's always made up in my freezer so I don't reach for other unhealthy snacks. This recipe is a slight variation from one in Jennifer Cornbleet's book "Raw Food Made Easy", she's awesome btw.
1 1/2 cups of walnuts
Dash of sea salt
11 Medjool dates
1/3 cup unsweetend cocoa powder (or carob powder if you prefer)
1/2 teaspoon vanilla extract
2 teaspoons of almond or coconut milk
Put the walnuts and salt in the food processor using the "S" blade until finely ground. Add the dates, cocoa powder and vanilla and process until the mixture sticks together. Finally, add the coconut milk and process briefly. Transfer to a flat container and pat down into a flat fudge-like form with a spatula. I like rolling it into little balls, my kids love'em. Keeps for about 4 days in the refrig or 2 weeks in the freezer.
